We love a quick and easy recipe for shredded mexican style chicken.

We take 2-3 boneless skinless chicken breasts and place them frozen or raw into the crockpot along with 1 1/2 cups of favorite salsa (pace picante works fine) and then sprinkle some taco seasoning over it. About 6hrs later we have a delicious meal. We use it over salad, over rice, in a taco shell, etc. The chicken shreads really easy after being slow cooked all day and is juicy. Combined with the summer time bonus of not heating up the house with the oven. "set it and forget it" style cooking.
